Leftovers

I hate waste. Throwing good food away is criminal, so when our bananas are on the turn it’s time to make banana bread, and if it’s Halloween there will be leftover pumpkins.

Nigel Slater has a good recipe for pumpkin scones in the Observer magazine. I replaced parmesan cheese with strong cheddar and gave it a go.

The one thing he omitted was the oven temperature. They went in before Delia’s recommended 220 C had been reached and appear a bit on the flat side. The pumpkin flesh had been crudely sliced – mashing might have been better.

But as they say, the proof of the pudding is in the eating… tasty.
