I hate wasting food. The carrots had sat on the windowsill for too long and had to be put in the wee brown bin for compostibles. I had intended making carrot and coriander soup following Mary Berry’s recipe. I still want to make soup, but my Mary Berry cookbook is lost among all our possessions boxed up and stored until we move back into our renovated house.
The online recipes have far too many ads, so I ordered ‘Soups, Starters and Salads’ by Mrs Berry. I like the idea of butternut squash and sweet potato with fresh herbs and stock. I’m sure she will have something similar. I could buy a turkey leg and make my own stock with celery, onions and carrots… maybe. Butter beans and lentils are good in soups and stews. Potatoes are always handy to thicken but might be too much if you have already used lentils.
The newish slow cooker has yet to be used, but soups and stews are ideal for it’s first use.
