I woke early this morning and couldn’t get back to sleep, so, as I have done countless times before, I got up and did some baking. It was scones using Delia Smith’s recipe from her Complete Illustrated Cookery Course book. It is a recipe I have used many times with success.
Today was not a success. I think using margarine straight from the fridge was a mistake. The recipe called for butter at room temperature. The dough stayed sticky no matter how much kneading I gave it. I flattened the dough by hand and cut out seven discs. The resulting scones are edible but not impressive.
